cebu bibingkaA classmate of mine couldn’t make it to our high school reunion in Manila. However, she brought along the famous Cebu Bibingka. I was delighted. For the past days, I have been whining to my husband that I was craving for Cebu Bibingka. And here was my answer!

Cebu Bibingka
Bibingka From Cebu is unique. We use rice powder and coconut milk with tuba as the baking powder substitute. Banana leaves are used for lining the mixture before cooking them in an earthen ware mini oven with coco husk as fuel.

    I remember a traditional bibingka made by the woman who was the shopkeeper at the Lantaka Store, in Haleiwa, Hawaii. This was in the 70’s. The bibingka looks like yours as pictured, except her’s didn’t have freshly grated coconut, but it was still roasted in a banana leaf and about 5″ in diameter. All the bibingka recipes I’ve seen on the web sound like a cake with flour and butter. Who makes the traditional type – I’d love to find a good recipe. Thanks

    This bibingka look so yummy!!! just looking at it makes me remember d good old times…i use to eat alot of bibingka while growing up my father used to bring it after he got off from work…

    I wish someone will post a recipe for this!
