I have shown suman from Pangasinan , the tupig. What is suman anyway?

According to scentofgreenbananas.blogspot.com:

suman(súmahn) is the filipino steamed rice cake. it comes in as many different forms as there are provinces, but the basic recipe is waxy (sweet) rice wrapped in leaves, then cooked.

The suman sa lihiya is waxy rice soaked in lye, then wrapped in banana leaves, and boiled for a couple of hours. it is served with sugar and freshly grated coconut, or with latik (lah-téek)–coconut milk solids that are formed when boiling fresh coconut milk.

I get my suman sa lihiya at the Salcedo saturday market if I am not in Batangas. Whenever I eat this type of suman , I remember my dad because he would always bring this whenever he goes to Quezon province. Oh yes, suman is a childhood comfort food.

If you’re in Manila, you can buy flavored suman in Tiendesitas and Salcedo saturday market.

    I love Suman sa Lihiya!! My dad is from Taal and we’d always take some home from our trips to Taal. We actually like it with the Batangas “chokolate” and mango slices. Brings back a lot of good memories from my childhood.

    Wow! It that something misspelled? Is it really soaked in lye? Or is lye in the Phils something different than the lye in the States?
