
My first encounter with Pancit Lucban was in Lucban itself. My dad’s hometown is Sariaya , Quezon which is not far away from Lucban. Made from rice flour rather than wheat flour and eggs, the local noodles got its name and developed its unique attraction by the way it is eaten. Pancit Lucban is hawked in the streets and served on a piece of banana leaf, without any fork so it is eaten straight from the leaf, aka “habhab”-style.
