Mooncake, Black Mung Bean with Salted Egg

mooncakeMost mooncakes are baked and consist of a thin tender skin enveloping a sweet and slightly oily filling. The mooncake may contain one or more whole salted egg yolks in its center to symbolize the full moon. The saltiness of the yolk balances well with the sweet filling in the mooncake. Most likely, this type of mooncake is influenced from certain provinces of China and Taiwan since their mooncake are known to be tender rather than flaky or chewy. My kids have outgrown Chinese cakes. They used to love it. Now they don’t like the salted egg mixed with the sweet filling. Time does change the taste buds of the kids but that hasn’t happened to me yet.
