Lumpiang Ubod

Lumpiang Ubod is a favorite food especially when one is on a vegetable diet. It has the vegetables, a few carbohydrates and probably a little fat in it, hopefully the good fats. It is the better alternative though since one can’t help but eat out when in meetings, parties or events. This Lumpiang Ubod is served at Serye and most restaurants in the Philippines.

Here is a recipe from a winner of the Lumpiang Ubod recipe , from Jose C. Magboo

Ingredients:

2 cups fresh ubod
1 cup chicken
1/2 cup shrimp
1 whole medium onion
1 tablespoon garlic
1 teaspoon black pepper

Cooking Method:

Saute onion and garlic. Add chicken and fry until brown. Add shrimp and saute for five minutes. Add ubod, stirring occasionally until meat and vegetables are tender. For sauce, mix 1 cup sugar, 3 teaspoons soy sauce, 3 cups water, 1-1/2 teaspoon salt and bring to a boil. Slowly stir in 3 tablespoons of cornstarch until thick. Season with black pepper and serve with sauce.

At home, it is recommended to use Olive Oil as it is considerably rich in monounsaturated fats, most notably oleic acid.

    it’s difficult to find ubod in the market. Once you find it, usually napagpilian na. All is left are the fibrous ubod.
