Canonigo at Mario’s Restaurant

At the lunch buffet at Mario’s Restaurant in Timog last Sunday, I tried canonigo for the very first time. I had no idea what it was since this is a dessert that my family and I never served during our gatherings, but I soon learned that canonigo is a merengue covered in rich custard sauce. I was a little hesitant about trying it out because I felt so full, I thought my stomach would burst. Upon taking a bite, however, I learned that canonigo is the perfect dessert to take after large, filling meals. It’s flavorful enough to complement the saltiness of the main course, yet very light on the stomach. The merengue piece melted almost as soon as I put it in my mouth, and the creamy custard added texture to the pastry. Despite being stuffed to the point of explosion, I was able to eat two slices and get my sugar fix without feeling like I just pigged out.
