Noche Buena Dishes: Apple-Cinnamon Chinese Ham

Filipinos love to celebrate with food, and the noche buena is no exception. Noche buena is a late late dinner held on Christmas Eve after the entire family has attended Midnight Mass, held an hour before midnight. Just as lechon is a staple in fiestas, so is the noche buena incomplete without a plate of hamon or Chinese ham as the main course. This dish is a honey-glazed, boneless ham traditionally served with slices of pineapple. Leftovers are turned into pochero the following day, a flavorful Filipino stew featuring as many kinds of meat as the cook wants.
Last Christmas, my mom took an interesting spin to the traditional Chinese ham. Instead of using pineapple glaze, she came up with an apple-cinnamon concoction and garnished the ham with apple slices and maraschino cherries. The resulting dish was Christmas ham whose saltiness was complemented by the sweet subtlety of applesauce with a hint of cinnamon.
