Noche Buena Dishes: Pochero/Cocido

Filipinos are experts at making sure that nothing ever goes to waste, especially when it comes to food.  Leftovers from noche buena are turned into pochero the following day, a Filipino stew that contains various kinds of meat, usually Chinese ham, beef, and chorizo.  Pochero is typically made with a red tomato sauce, but the Cebuano version (called cocido) resembles bulalo, a soup dish containing bone marrow from beef shank.  It’s even eaten like bulalo since cocido usually comes served with a knife and a stick for digging out the bone marrow.

The hot, flavorful broth of cocido is perfect for those cold December evenings, and the crispy cabbage and string beans adds different textures to the meaty soup. Try pochero/cocido recipe you can try out so that not a single scrap of your Christmas dinner goes to waste.
