Paella is not traditionally a part of the noche buena fare but every now and then, some Filipino families include this tasty rice dish on the menu.  Closely related to its Spanish origins, Filipino paella is primarily a seafood paella that includes mussels, shrimps, clams, crab, and slices of hard-boiled egg.  There are regional variations on the dish, depending on the availability of the ingredients; some paellas also include slices of chorizo, beef, and chicken.

The trick to preparing paella for noche buena is to pre-cook the meat and sea food then bake the paella itself a few hours before the Christmas dinner.  This way, you don’t get stressed out by the number of dishes you have to prepare.  Try this Filipino paella recipe.
