Mango and Parma Ham with Mango Vinaigrette

Cena in Greenbelt 2 looked like a quiet place after lunch hours. I needed a place to work on my macbook at the same time take a quick healthy snack. Being such a cheapskate, I chose a salad, Mango and Parma Ham with Mango Vinaigrette. I took the half size costing 195 pesos (The whole portion costs 315 pesos)

It’s absolutely divine. I felt my hunger pains go away after a few bites. There is a feeling of fullness. The attractive array of colors gave me the illusion of fullness.

It’s one reason I often use Vinagrette. The advantage of using Vinagrette is that one can keep the dressing in the refrigerator on hand for salads throughout the week. Here is a basic vinaigrette to have

3 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
1 tablespoon chopped flat-leaf parsley
1/2 teaspoon finely chopped garlic
1/2 teaspoon Dijon mustard
Salt & freshly ground pepper to taste
8 cups mixed salad greens

Whisk together oil, vinegar, parsley, garlic and mustard in a salad bowl. Season with salt and freshly ground pepper. Toss with salad greens.
