The art of making lamian or Chinese hand-pulled noodles is something that is unique to China and can only be done by a trained cook. The cook prepares a lump of dough and stretches it using his hands while shaking the dough up and down. The dough is then made to twist around itself and then shaken several more times until it is firm enough. Then the chef pulls the dough with his arms stretched out completely, folds the dough in two, then stretches again until the dough becomes longer and thin enough to become fine noodles.

Watching a chef pull noodles is a lot like watching a circus act; making hand-pulled noodles require speed, dexterity, and accuracy.  You don’t have to go all the way to Eastern China to experience eating lamian, though.  Meylin’s Pot and Noodle House serves genuine, Chinese-hand pulled noodles in tasty beef broth or stir-fried with vegetables and meat.  Located at the fourth floor of SM Megamall A, there’s no way you can miss Meylin’s. Besides being one of few restaurants in that floor, the crowd at the store window watching the chef do their noodle-pulling tricks and the aroma of Chinese food will be enough to let you know that you’re there.
