While some claim that they can tell the future using tea leaves, David DeCandia can do so much more—he can tell you what the future of tea is.
His arrival was a response from The Coffee Bean & Tea Leaf’s recognition of the burgeoning appreciation for the diversity of tea in the Philippines. “The Tea Appreciation seminar is our way of introducing Filipinos to the range of flavors that they can have with tea—and what better way to introduce them to this experience than through a renowned tea connoisseur like David DeCandia?” says Marketing Director of The Coffee Bean & Tea Leaf, Paolo Del Rosario.

A self-taught connoisseur and famed Master Tea Blender, his understanding of the intricacies behind tea origins are likely the reasons why the finer points of tea making—despite the ubiquity of tea bags and instants—have not been lost. In fact, his efforts to let the world discover the exceptional fusion of flavor and aroma prompted the Philippines to wake up to a new brew.
Understanding the art of tea making, including the complex details behind the way tea is grown processed, brewed and served, all adds to the production of the perfect cup. “The bottom line is that that future is in whole leaf,” says DeCandia. “And the difference is evident in terms of the richness and fullness of the flavor.”
Whole teas are wrapped in delicate mesh pyramid pouches that allow the leaves to unfurl and develop its rich and distinct flavor. Being part of the Tea Association of the United States of America and Specialty Tea Institute, as well as a regular speaker for the annual World Tea Expo, DeCandia lends his expertise to Filipino tea aficionados by exploring the diversity of tea. For instance, food pairing gives foodies a chance to heighten their tea drinking experience by pairing the infusions with gastronomic options – cheesecakes go very well with the Chai’s sweetness; while Genmaicha’s clear and crisp flavor work well with the zest of the Mango Wasabi Salad.
