I like it when stores get innovative and present time-honored Filipino treats in unfamiliar ways. BibingKinitan is a small bakery that specializes in – can you guess? – bibingka, and there are two things that make them different from other stores that sell this yummy rice cake. First, their bibingka comes in mini sizes not bigger than an adult hand, which means it’s a lot easier to bring home as pasalubong or eat while on the go.

Secondly, BibingKinitan offers different toppings that you can put on your bibingka, among which are strawberry, blueberry, and caramel.

As for the bibingka itself, it was without a doubt one of the softest and most moist bibingkas I have ever had. The impression I got from my first bite was the sensation of marshmallows melting in my mouth.

A box of six mini BibingKinitan bibingkas cost Php 120, whether or not you decide to put toppings on them. I don’t think the toppings are really necessary as they’re good to eat on their own, but they add an interesting twist if you want to eat your bibingka in a different way.
